Is poached salmon exposed to taste different than pan fried?

i poached salmon for the first time. what did I do wrong, i put the water to a simmer, let it sit for about 5-6 minutes, than flipped it and waited another 5 minutes and took it out. it tastes a little bit different than pan fried salmon. is that normal, or did i do something wrong?
