I need to find a compost expert soon! Individual, organiztion or school.?

The restaurant that I work at is starting composting,...today, and I am in "charge". The problem is from my understanding we can not use salad dressings, er and mayo. Is this still true even though our compost piles are a good 7 feet tall and wide? It's just a hard pill to swallow that salads and cooked vegetables will be wasted. I need to speek to an expert. Do you know where or how I can find one? Help me please!
