How can i make Chile Con Queso Cheese Dip ( Enchilada Sauce )?

Ok now this is for my pregnant wife and she is super picky. We used to eat at this restaurant in Springfield, MO called Mexican Villa and they had this Cheese dip on the menu called Chile Con Queso. It was a cheese dip with a chili powder/enchilada taste too it and i would love to be able to make something close to it. Now here's where her pickiness comes into play. There can be NO chunks in the cheese dip. Like salsa would usually have peppers, etc. She just wants it to be smooth like a normal cheese dip would be...Thanks
